RECIPE EXCHANGE

and "Mamma" is what we use in Norway for "Mother".

Mamma's Hot Dish

Ingredients:

  • 2 Lbs. ground Beef
  • 2 medium Onions (cut and diced)
  • 1 Green Pepper (cut and diced)
  • 2 Tbsp. ground Coriander
  • 2 Teasp. ground Turmeric
  • 1/2 Teasp. ground Cumin
  • 1 Teasp. ground Ginger
  • 1/4 Teasp. ground Pepper
  • 1-2 Teasp. crushed hot Red Pepper (adjust to taste)
  • 1-1/2 Teasp. Salt
  • 1 can Tomato Soup
  • 1 can Beef Broth
  • 1 Tbsp. Tomato Paste
  • 1 Lb. box of elbow macaroni


Brown meat in skillet. Lightly saute' onions and green pepper. Cook macaroni until softened but not overdone.

Drain.

Combine macaroni, meat, onions, green pepper, tomato soup and paste, broth and all spices in large kettle. Mix all ingredients well. Add some water if necessary. Cook on low heat until food has been warmed.

Kulfi (Indian Nutty Ice Cream)
from the Greenway to Healthy Living Cookbook

This kulfi is a little bit quicker to make than the typical version, but it is still a terrific Indian ice cream.

Ingredients:

  • 2 cups (16 fl oz or 500 ml) whipping cream
  • 1-1/4 cups (10 fl oz or 300 ml) sweetened condensed milk
  • 10 tablespoons (5 fl oz or 150ml) milk
  • 1 slice white or whole-wheat bread (about 3/4oz or 22g)
  • 10-15 almonds
  • 5-6 cardamom pods, peeled
  • 15-20 pistachios (optional)
  • 1 cup (about 6-8oz or 155-185g) fresh or canned mango pulp (optional)

Mix all the ingredients in a blender and blend at maximum speed for 2 minutes. If you are using the mango pulp (available at most Indian grocery stores), blend it into the kulfi mixture. Pour into a container [with a lid] that seals or into popsicle molds. Freeze overnight. Serves 10 to 12.
